Food and cognac pairings
For several years now, during gourmet meals at Château Fontpinot, we pair our cognacs with different families of foods: meats, fish, shellfish & crustaceans, fruits & vegetables, cheeses, and desserts. Finding the right balance between acidity, bitterness, richness, sweetness, and saltiness is essential so that the food does not overpower the cognac and vice versa. Cognac Frapin VSOP
For our pairings with the following dishes, we place the Frapin VSOP carafe in the freezer for two days. With the cold, an alchemy occurs; our VSOP cognac thickens, its aromas become concentrated, and it achieves a great softness. Once at the table, the carafe and the cognac warm up, and its subtle aromas gradually reveal themselves, all in gentleness.

Cognac Frapin Château Fontpinot XO
On a chocolate dessert, our Château Fontpinot XO reveals vanilla and woody flavors. With a dark chocolate macaron, or paired with a praline mousse made with three chocolates, it will satisfy the most discerning gourmets. When combined with mimolette, parmesan, sheep cheese, or blue cheese, it will surprise with its aromatic persistence. The culinary uses of Fontpinot XO are numerous.
